What makes goat lactose powder unique?

Goat lactose is isolated from goat whey, a by-product of goat cheese production. Ultrafiltration produces two streams: one rich in protein and the other rich in lactose. The lactose-rich stream is then further purified, concentrated, crystallized, and dried to produce lactose powder.
